A Sparkling Milestone for Roman Road
It’s an exciting time at Roman Road as we approach the much-anticipated release of our Chardonnay and Sparkling wines.
This week, Liza and Michelle had the special opportunity to take part in the final stages of crafting our Unity Sparkling 2025 — a blend of Chardonnay and Chenin Blanc grapes, making it a true blanc de blanc sparkling wine. Crafted in the traditional French méthode, just as with Champagne, this process is a true labour of love.
The traditional method begins with the first fermentation, which produces a still base wine. The magic happens during the second fermentation, which takes place inside the bottle itself. Before sealing, yeast and sugar are added to the base wine. As fermentation resumes, the carbon dioxide is trapped, forming the delicate bubbles that define sparkling wine.
The wine then ages on its lees (the yeast sediment), developing its complex flavours and rich texture. To clarify the wine, bottles go through riddling — the gradual turning and tilting of bottles so the sediment collects in the neck. This is followed by disgorging, where the neck of the bottle is frozen to form an ice plug that is then expelled under pressure when the temporary cap is removed.
Immediately afterward, a small amount of dosage — a specific mixture of wine and sugar — is added to perfect the balance before the bottle is sealed once more, washed, and set aside to rest before receiving its foil and final labels.
Liza and Michelle were thrilled to get their hands (and everything else!) a little dirty during the disgorging process, witnessing firsthand this remarkable final stage of our sparkling journey.
Special thanks go to our winemakers, Anthony, Ian and Kylie, who generously shared their knowledge and laughter with us during this process.
The Unity Sparkling 2025 is a limited release, perfect for summer celebrations or as a festive Christmas treat. We can’t wait to share this special wine with you soon.
Bindoon Agricultural Show & Rodeo
Roman Road was thrilled to have a stall at the recent Bindoon Agricultural Show, held on Saturday, 18 October 2025.
It was a beautiful day with a vibrant atmosphere, and a big crowd was out enjoying the sunshine. We were delighted to offer free tastings of our Real Deal Shiraz, Volt Chenin, and Tiffany Rosé, and to sell our wines to both new and returning customers.
Our stall was buzzing all day! Ian and Liza really missed their dear friend Michelle — especially while battling a few IT issues — and only later realised they hadn’t taken many photos… oops! 😊
The show wrapped up around 4:00 pm, and everyone headed over to the Rodeo, which was a fantastic event filled with family, friends, and plenty of fun.
A huge thank you to the Bindoon Agricultural Show and Rodeo organisers for putting on such a great day. We can’t wait to be back next year!

Texan RR1-T5 Goes to a New Home in Northampton
At Roman Road Speckle Park Cattle Stud, we have been proudly developing our stud line since 2022 with the goal of producing top-quality Speckle Park breeding stock. Today, we share a story that’s both a little bittersweet and incredibly exciting.
We are proud to announce the sale of our beautiful bull Texan RR1-T5, who has recently made his way to a new home near Northampton, Western Australia. Texan now lives with a young farmer who is establishing his own Speckle Park herd - and we couldn’t have asked for a better fit.
Texan has always been a gentle soul with a strong pedigree. He is the offspring of Kamarah Real Deal R322 (a striking leopard bull) and Kamarah Rouge R351 (a classic speckled dam), and he carries forward the kind of temperament and structure we aim for in all our cattle.
Texan celebrated his third birthday on Tuesday, 9 September, in style - with a big bucket of cattle cubes and a warm welcome from 15 beautiful Speckle Park heifers who now share his paddock.
Selling a bull like Texan is never an easy decision. Each of our animals is raised as part of our extended family, and every sale is made with great care and thought. That said, we are absolutely thrilled to have met Texan’s new owner and are confident he’ll be loved and well looked after in his new home.
We look forward to hearing how Texan settles in and seeing the legacy he creates as part of this exciting new herd.
Roman Road Joins a Taste of Chittering 2025
We were thrilled to be part of A Taste of Chittering 2025, a fantastic community event celebrating the Chittering region’s rich agricultural roots, local talent, and vibrant culture.
Held on a sunny Sunday, 31 August, this year’s festival drew an impressive crowd of around 6,000 visitors from across Western Australia. The atmosphere was lively, with families and foodies alike enjoying fresh local produce, handmade crafts, live entertainment, and interactive cooking demonstrations throughout the day.
Roman Road made its debut appearance at the event with a branded stall in the licensed area, where we offered complimentary tastings of our latest wines:
Real Deal Shiraz 2024
Volt Chenin 2025
Tiffany Rosé 2025
It was a fun, busy day with plenty of interest in our wines - keeping Liza, Ian, and Michelle on their toes from start to finish! We loved meeting so many enthusiastic visitors and sharing what makes Roman Road wines special.
A big thank you to everyone who stopped by - we can’t wait to return next year!
Roman Road Wines Earn Medals at Swan Valley Wine Show
We are delighted to share the results from the Swan Valley Wine Show, held in mid-August 2025, where we entered three of our wines: Real Deal Shiraz 2024, Volt Chenin 2025, and Tiffany Rosé 2025.
We are proud to announce the following results:
· 🥈 Real Deal Shiraz 2024 – Silver Medal
· 🥉 Volt Chenin 2025 – Bronze Medal
· 🍷 Tiffany Rosé 2025 – narrowly missed a Bronze by just 1 point
These results are a great validation of the hard work we put into crafting wines that reflect both our vineyard and the region.
It was also a pleasure to attend the awards night, connecting with others in the local wine industry and celebrating the quality coming out of the Swan Valley and surrounding regions.
We would also like to extend our congratulations to Ian Yurisich from our good friends at Olive Farm Wines who was officially recognised as an Icon of the Swan Valley 2025 - one of only a handful ever inducted since the award’s inception in 2010 for his contribution to shaping the history, character and future of the Swan Valley region. Well done Ian!
Roman Road is a proud member of the Perth Hills Vignerons Association, and we have also submitted entries into the upcoming Perth Hills Wine Show. Judging takes place on 23 September, with the awards function on Friday, 26 September—so stay tuned. We’ve got our fingers crossed for more great results!
